Runner beans and new potatoes give our meals a taste of summer,
and are good in a salad, too.
In a salad bowl mix:
1 lb (500g) diced boiled new potatoes
½ lb (200g) wedges of boiled runner beans
1/2lb (200g) halved cherry tomatoes.
For salad dressing whisk together:
3 tablespoonfuls of rapeseed, or olive oil
1 tablespoonful of cider vinegar
1 teaspoonful of honey
salt and pepper.
Pour over salad and mix well. Decorate the salad with
chopped hard-boiled eggs and chives. Cubes of Feta, or
cheddar cheese turn this into a meal.
