1 large peeled celeriac
an equal amount of peeled potatoes
boil or steam them until cooked, drain well and mash
to every 1 lb (450g) add:
2oz (50g) grated Stilton cheese
two tablespoonfuls milk
1 oz (25g) butter
Season with freshly ground black pepper and a little grated
nutmeg.
Place the mash in a buttered oven proof dish, sprinkle
breadcrumbs and grated stilton over the top and bake in a hot oven
until golden brown. Good with meat or vegetable stews.
