Ingredients
- 250gm dried split green peas
- 1 onion, 1 carrot
- 1.5 litres water
- 1 or 2 stock cubes
- 1 tablespoon oil
- Salt and pepper to taste
Method
Pour boiling water over peas and soak for an hour or so. Rinse
after soaking and drain.
Chop onion and carrot into small pieces. Heat oil in a large
saucepan and fry until softened.
Dissolve stock cubes in about 1.5 L hot water. Add peas and stock
to carrots and onions. Bring to the boil, then simmer gently for
30-40 minutes.
Mash or liquidize soup until smooth. Add more water if too
thick.
