Ingredients:
½ pint (300ml) Guinness (or stout)
12 oz (300g) mixed dried fruit
1 egg
4oz (100g) brown sugar
8oz (200g) self raising flour
Method:
Soak the dried fruit in the Guinness overnight. Place the flour
and sugar in a mixing bowl, add the egg and soaked fruit. Stir
well, and place in a lined 2lb (1kg) loaf tin. Bake in a moderately
hot oven, 175c, for 45 - 50 minutes. This can be sliced and
buttered, but is rich enough to eat on its own.
