This is good with Devon cheese.
To 8oz (200g) raw beetroot, peeled and finely grated (cooked
beetroot can be used in place of raw if preferred), add 3oz (75g)
grated cooking or eating apple. Season with salt and pepper, and
add 1 teaspoon finely grated fresh horseradish, or a spoonful of
prepared horseradish sauce, and mix to a creamy consistency with
mayonnaise, and Greek yogurt or soured cream.
