Small early new potatoes are good when sautéed whole. Wash the
potatoes and part boil in salted water. Drain, and fry the potatoes
in a mixture of butter and olive oil until golden brown. A clove of
crushed garlic can be added. Sprinkle with chopped chives and mint.
These make a tasty addition to summer meals and are good way of
using smaller potatoes.
