Devon Ratatouille
This version uses local organic produce, and can be served
hot with meat, fish or pasta, or cold as a salad or dip.
1 lb (450g) peeled and thinly sliced, or chopped courgettes
8oz (200g) peeled and chopped tomatoes
4oz (100g) peeled and sliced red onions
2 cloves garlic crushed,
Organic rapeseed oil, salt and black pepper
Cook the onions and garlic in 4 tablespoons of rapeseed oil
until soft. Add the courgettes and tomatoes, and simmer for 5 to 10
minutes. Season to taste and finish with chopped parsley or
coriander.
