Make the most of this season's crop of blackberries
Ingredients:
1 lb (500g) blackberries
Juice of half a lemon
3 tablespoons granulated sugar.
1 teaspoon cornflour
Thick natural yogurt
Method:
Put blackberries, lemon juice and sugar in a saucepan, bring to
the boil, stirring gently (to keep the blackberries whole), and
simmer for 2 minutes.
Mix cornflour with a little water, add to pan and bring back to
boil. Allow to cool, and stir into yogurt for a healthy
pudding.
Good for breakfast too!
