Something different for the store cupboard!
You will need:
- 250gm/8oz stoned prunes ( Agenprunes if you can get them)
- 25gm/1oz brown sugar (Muscovado is best)
- a cinnamon stick
- a bay leaf
- port
Place the prunes, bay leaf, and cinnamon stick in a preserving
jar, and add brown sugar.
Cover with port, seal, date, and label the jar.
Store for at least six months before using.
These are good to serve with fresh pineapple, or ice cream, and
their rich flavour makes an unusual accompaniment to roast
pork.
